Asian Noodle Soup

In this segment, Marina Cortese, Registered Holistic Nutritionist, shows us how to make an Asian Noodle Soup that is super healthy and delicious, without preservatives and extra sodium.

Ingredients for the Asian Noodle Soup

  • 6 cups Organic Chicken Stock
  • Coconut Oil
  • 1 Yellow Onion – diced finely
  • 2 cups Baby Bok Choy
  • 2 cups Oyster Mushrooms
  • 1 cup Bean Sprouts
  • Handful chopped Cilantro
  • 1 Red Chili Pepper, seeded and minced
  • 3 Cloves Garlic, minced
  • 1 inch Fresh Ginger, minced
  • Buckwheat or Spelt Noodles

Add the coconut oil to a large pan until melted and add onions until soft and tender.  Add the minced ginger and garlic and fry for 2-3 minuted.  Add red chili pepper, as much as you like according to the heat level you desire.  Add chicken stock and let come to a boil.  Add green onions, cilantro, bok choy, oyster mushrooms and bean sprouts and let simmer for approximately 5 minutes until veggies are cooked al-dente.  Boil noodles separately until cooked and drain.  Add noodles to a bowl and then ladle the broth over the noodles.  Kitchen designed by Paula Kerr and  Interior Design Agency ‘Your Home Design
